Dairy Free Cinnamon Buns
This is the website I used to make mine, but I adjusted it quite a bit. What I did love about this website was that they explain a lot of substitutions at the beginning. Worth referencing if you do not want to use one of the ingredients that I list.
NOTE: I do not have a standing mixer so this can be done with a bowl, whisk, and your arm/hand
Also, the dough will need to rise twice, each for about 2 hours or until the dough is double its size, so make sure you give yourself enough time.
Ingredients
Buy these for the dough
1 cup warm water
1 tbsp instant yeast (this is important so make sure you buy some before getting started)
2 tbsp coconut sugar
3 tbsp coconut oil (melted)
1 egg (or sub 1/2 cup maple syrup)
1 tsp salt
3 cups organic all purpose flour
Buy these for the filling
1 cup brown sugar
3 tbsp cinnamon (I like a lot in mine so feel free to add less)
1/4 cup coconut oil
Buy these for the drizzle
2 cups powdered sugar
3 tbsp oat milk

Lets Start w/ the Dough
In a small mixing bowl combine 1 cup brown sugar and 3 tbsp cinnamon; set aside
In a large mixing bowl, gently stir together 1 cup warm water, 1 tbsp instant yeast, and 2 tbsp coconut sugar
Let that sit for 2 minutes until it bubbles (yeast is activated)
Add 3 tbsp coconut oil, 1 egg, 1 tsp salt, 3 cups flour
Use a whisk to combine ingredients, but when combined start to knead with your hands (or a dough hook if you have a mixer)
Knead until the mix is sticky but the clumps are out and you can get it into a kind of ball shape (maybe 5-7 minutes)
Grab a kitchen towel, get it wet, wring in out and lay it over your bowl
Place bowl in the pantry or cabinet (some warm place) until it has doubled in size (maybe 2 hours)
Take dough out of cabinet and remove kitchen towel and “punch the dough” (just keep pushing on it to get any air pockets out)
Sprinkle 1/2 cup flour onto kitchen table and dump the dough out
Roll dough out into a large rectangle or oval
Drizzle 1/4 cup coconut oil on dough and smooth it out so it covers entire piece of dough
Sprinkle cinnamon and sugar mix from beginning evenly across dough (really pile it on!)
Roll the dough from the longer side (hotdog bun style)
Cut dough into about 12 even slices)
Note that this will look and be kind of messy but that okay :)
Gently place each piece onto the parchment paper lined baking sheet
Grab your damp kitchen towel, cover the sheet, place it in a kitchen pantry or cabinet (somewhere dark and warm) until pieces double in size (about 2 hours)
Preheat oven to 360F
Bake for 20 min.
Remove from oven and let cool
Do this for the drizzle:
Combine 2 cups powdered sugar and 3 tbsp oat milk with whisk in small bowl
Finish by pouring a spoonful of powdered sugar over warm a cinnamon bun and enjoy!
