Gluten Free Apple Cake

Ingredients

  • 3 cups Bob’s Red Mill 1 to 1 Baking Flour

  • 1 cup coconut sugar

  • 1 cup white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 tablespoon cinnamon for apples

  • 1 tablespoon cinnamon for cake batter

  • 4 eggs

  • 1 tablespoon vanilla extract

  • 1 cup oat milk (or dairy free milk of choice)

  • 1 cup dairy free butter (I use Earth Balance)

  • 5 organic Gala Apples

MAKE

  • Peel apples, cut into thin slices, add 1 tablespoon of cinnamon + 1 tablespoon of sugar to apples; mix with hands ; set aside

  • Combine softened butter + 2 cups sugar (coconut + white) in mixer to cream together

  • Add eggs, vanilla, + oat milk

  • Mix

  • Add 3 cups gf flour, baking soda, baking powder, + cinnamon

  • Mix

  • Spray cake pan with Avocado Oil

  • Flour cake pan lightly with gf flour (just sprinkle flour all over the pan so it is lightly covered)

  • Pour 1/3 batter into cake pan (smooth so batter is spread evenly)

  • Add 1/2 apples (spread evenly)

  • Pour 1/3 batter on top of 1st apple layer (smooth so batter is spread evenly)

  • Add the rest of the apples (spread evenly)

  • Pour last 1/3 batter of batter on top of apples (smooth so batter is spread evenly)

  • Bake at 350°F for 1.5 hours

  • Let cool completely before taking out of pan
