The Best Sunday Morning Pancakes

 
 

Sunday mornings are always made better with a good pancake recipe. Pancakes are one of those foods that can leave you feeling empty afterwards. While traditional recipes are delicious and not inherently bad, I crave a recipe that keeps me full and adds a bit of nutritional value to my day. This recipe ticks all my Sunday morning boxes: it is quick and simple to make, nutritionally dense, and totally delicious. As always, don’t be afraid to substitute ingredients and add your favorite fresh fruit, nuts, nut butter, or jams on top!

INGREDIENTS

Dry ingredients 

½ cup gf rolled oats 
2 cups all purpose gf flour 
1 tsp baking soda 
2 tsp baking powder 
Pinch salt 
1 tsp cinnamon 

Wet ingredients 

2 cups oat milk (although I usually use almond or coconut for people who are celiac because sometimes oat milk can still bother their tummy) 
1 tsp vanilla extract 
2 ripe bananas 
1 tbsp maple syrup 
3 tbsp neutral oil (coconut, sunflower, olive, grapeseed) 

Toppings 

Blueberries 
Maple syrup 

Makes 6

 

MAKE

Mix dry ingredients in a large mixing bowl
Mix wet ingredients in a small mixing bowl 
Pour wet ingredients into dry ingredients; Mix
Heat pan on medium
Add 1 tsp butter or neutral oil to pan 
Drop one ladle of pancake batter into the hot pan
Let cook through (cover pan with lid to cook evenly)  

Enjoy with fresh blueberries and maple syrup!
