Veggie Pita Pocket
Ingredients
Pita pocket (I used the Trader Joes whole wheat pockets but if you check out a local bakery or Italian market they might have some fresh)
2 tablespoons olive oil
Cherry tomatoes
Onion (thinly sliced)
Mushrooms (chopped)
Green peppers (thinly sliced)
Cucumbers (chopped into halves)
Hummus (I made mine from scratch using Ottolenghi’s recipe)
MAKE
Heat your pita pockets in the oven (350°F for about 3-5 min)
Sauté onions, green peppers, and mushrooms over medium heat in a large skillet with 2 tablespoons olive oil
Slice cherry tomatoes into halves
Add humus to the pita pocket, top with sautéed veggies, and add cherry tomatoes!
